Abstract: 
In this project we propose the creation of a theoretical and practical activities both through documentation and case studies by applying the procedures to measure odor by direct measurement using dynamic
olfactometry method. Also, by using mathematical modeling of pollutant dispersion in which we
can see how the odour is dispersed on medium and large distances, in order to protect the health and comfort of the population from sensitive areas.
